By popular demand – homemade muesli bars

I often make this recipe in a bit of spare time on Sunday: individually wrapped in cling film you can keep these homemade muesli bars in the fridge for a week. An easy, tasty and nutritious every day snack!

Homemade muesli bars + 4 variations

Makes 8 pieces

Ingredients
    • 120 gr of oats
    • 80 gr of mixed nuts and seeds (raw and unsalted)
    • if you wish: 1 tbsp. of flaxseed
    • 80 gr pitted dates, quartered
    • 1 tbsp. of cinnamon
    • 2 tbsp. of coconut oil
    • 2 tbsp. of water
    • 6 tbsp. of rice syrup or honey
    • grated coconut
Instructions
  1. Preheat the oven to 180 degrees
  2. Mix nuts and dates in a food processor until small bits remain (or cut by hand when you don’t have a food processor)
  3. Add the oats to the food processor and pulse a few times (the mixture should not be too fine)
  4. Add the cinnamon
  5. Meanwhile melt the coconut oil on low heat with the water and rice syrup or honey. Use a large enough pan to add the muesli mixture in the next step
  6. Once melted add the muesli mixture from the food processor to the pan and turn off the heat
  7. Stir well, you should now have a sticky but not too wet mixture (too wet? Add some oats. Too dry? Add some extra water/honey/oil)
  8. Cover a small oven tray (approx. 13×17 cm) with parchment paper (tip: crumple the sheet of paper first, you can now easily put it in the oven tray)
  9. Spoon the muesli mixture in the oven tray and press it well. Bake for about 25 minutes until golden brown
  10. Remove from the oven and already make incisions with a knife so you can easily cut the bars once cooled (it’s ok if the muesli bars seem a bit soft at this stage, they will harden during cooling)
  11. Sprinkle with grated coconut, cool completely and cut into 8 bars using the incisions you’ve made in the previous step

It’s getting a bit predictable but this is another of those recipe that once you’ve experienced how easy and delicious it is to make it yourself, you won’t buy them in the supermarket anymore!

The same snack every week is a bit boring so I’ll give you a few variations:

    • Chocolate muesli bars: add 1 tbsp. of raw cacao powder to the oil/ honey mixture and stir well before adding the muesli mixture. Even better when also adding 2 tbsp. of raw cacao nibs
    • Dried fruit muesli bars: replace half of the dates with dried apricots, raisins,cranberries etc.
    • Banana/ apple muesli bars: mash half a (ripe) banana and finely grate or cut half an apple. Add this to the mixture in step 6
    • 1001 night muesli bars: use pistachio nuts and replace half the cinnamon with ground cardamom. In step 6 add a few drops of rosewater (and maybe pomegranate molasses is a good idea? I’m going to try that one myself!)
