Crispy potatoes, smoked salmon and avocado mayonaise – IKEA Food Challenge
I just looooove crispy smashed potatoes with avocado aioli. Minus the garlic, plus smoked salmon from Ikea and some mint leaves you get a great lunch or dinner meal. Although it’s not the most challenging, difficult or innovative recipe, I have to say it’s one of my favourites in this IKEA Food Challenge*! After the trio of croquettes of course ;-).
*The Ikea Food Challenge is a Dutch competition that runs in September 2015. The winning recipe will be on the 2016 menu of all Ikea stores in The Netherlands.
Crispy smashed potatoes, smoked salmon, avocado mayonnaise and mint
Serves 2
Ingredients
- 400 gr small potatoes, skin on
- olive oil
- 1 ripe avocado
- 1 tbsp. (lemon) mayonnaise
- 1 tbsp. crème fraiche
- squeeze of lemon juice
- 100 gr Lax kallrökt, smoked salmon from IKEA
- 2 spring onions, thinly sliced
- handful fresh mint, leaves coarsely chopped
- salt and freshly ground pepper
Instructions
- Boil the potatoes with skin on in salted water until tender (test with a fork)
- Meanwhile make the avocado mayonnaise: Halve the avocado, remove the pit (keep it) and scoop the flesh into a high cup
- Add the mayonnaise and crème fraiche and use a hand blender to mix everything well (you can also use a small food processor or a blender)
- Season with a squeeze of lemon juice, salt and freshly ground pepper. Add the avocado pit to the sauce (this prevents the sauce discolours) and set aside
- Preheat your oven to 225 degrees
- Cover a baking tray with baking paper and divide the cooked potatoes
- Smash each potato, you can easily do this with the (greased) bottom of a glass jar
- Use a brush to cover each potato with some olive, this is what will make them crispy
- Season well with (sea) salt and freshly ground pepper and roast the potatoes in the preheated oven for 20-25 minutes until gold and crispy
- Divide the potatoes over 2 plates. Arrange slices of smoked salmon between/ on top of the potatoes. Sprinkle with spring onion and munt and finish with a few scoops of avocado mayonnaise
